- 1 gallon of water
- 3 ounces of sea salt
- 3 ounces of sugar (this ingredient is optional)
- 1 tbsp. of citrus zest (orange, lime or lemon – optional)
Directions
- In a pot, add the sugar, salt, and other aromatics. Bring the water to simmer until the sugar and salt have dissolved.
- Before you use the brine, remove the pot from the heat to chill.
- Let the meat brine for six hours.
- Drain the meat and let it air dry and rest in the fridge for two hours.
- Broil, grill, or roast as you prefer.
